Tomato Soup

Ingredients

  • 2 Tablespoons Butter
  • 2 Tablespoons Olive oil
  • 3/4 cup Onion, chopped
  • 1 1/2 pounds Tomatoes, peeled, cored and chopped
  • 1/4 cup chopped fresh Basil
  • Salt to taste
  • Pepper to taste
  • 1 cup Water
  • 1/2 cup powdered Milk

Directions

Heat the butter and olive oil over medium heat. Stir in onions and cook until tender.

Mix in tomatoes and basil. Season with salt and pepper. Reduce heat to low and simmer for 1/2 hour.

Put through a Foley mill. Return to stove. Dissolve the powdered milk in the water and add.

Simmer for 15 minutes. Put through a strainer and serve.
